Crustless Quiche Recipe
Ingredients (makes about 4 servings)
6 eggs
1 cup milk
1/2 cup Gruyere cheese
1/2 cup Cheddar and/or Swiss cheese
salt and pepper to taste
1 cup chopped vegetables (your choice: spinach, broccoli, and/or onion)
1/2 cup chopped ham or cooked bacon
Optional: pinch of nutmeg
Instructions
Preheat oven to 350 degrees. Grease 9” pie pan. In large bowl, whisk milk, egg, cheese, salt and pepper. Add in additional ingredients and stir. Pour into the pie pan and bake for 30-40 minutes or until fully cooked (the center shouldn’t be jiggly).
Serve with fresh fruit or a whole grain pancake for a complete breakfast!
